Bolognese

INGREDIENTS

2 tsp extra virgin olive oil
2 garlic cloves
1 brown onion, finely diced
500 grams beef mince
1/2 cup water
800 grams passata
140 grams tomato paste
2 tsp sugar
2 tsp Worcestershire sauce
2 dried bay leaves
2 tsp thyme
1/2 tsp Italian herbs
Salt and pepper 
Pasta of your choice
Parmesan cheese to serve

 

PREPARATION

 Heat oil in a large pot over medium-high heat. Add the onion and garlic and cook for about 3 minutes until they turn lightly golden and soften.

Increase the heat to high and add the beef, breaking it up while cooking until it browns.

Pour in the water and let it simmer for about a minute.

Add all the remaining ingredients to the pot, except salt and pepper, and stir well to combine them. Bring the mixture to a simmer.

Reduce the heat to low, maintain a simmer, and cook covered (e.g., with a lid) for 30 minutes, stirring occasionally.

After 30 minutes, increase the heat to medium and cook uncovered for another 30 minutes.

At this point, you can adjust the consistency (thickness) of the sauce to your liking by slowly adding water to the pot. 

Season with salt and pepper to taste.

Serve over cooked pasta with parmesan cheese.
