Lady finger biscuits (the amount will vary depending on your serving dish size)
1 and 1/2 cups strong coffee
200 grams white sugar
2 tsp vanilla extract
450 grams mascarpone
Cocoa powder for dusting
Optional: Berries for decorating
Prepare the coffee and set aside.
Separate egg whites and yolks. Mix the egg whites and roughly half of the sugar in a stand mixer until stiff peaks form. Once stiff peaks have formed, transfer to a large bowl and set aside.
In the same bowl, combine the egg yolks and remaining sugar and beat on high for up to five minutes or until the mixture becomes smooth and pale yellow.
Add the mascarpone to the egg yolk mixture and combine until smooth.
Carefully fold half of the egg yolk mixture into the egg white mixture, then add the remaining half. Be careful not to over-mix or deflate the batter too much.
To assemble the tiramisu, quickly dip the lady fingers into the coffee (less than 1 second!) and place them into a serving dish. Layer your serving dish until the lady fingers cover the bottom.
Add your cream mixture and carefully spread it out over the lady fingers so they are completely covered.
Repeat the layering process (lady fingers and cream mixture) until the last layer consists of the cream mixture.
Dust the cocoa powder over the entire tiramisu using a fine strainer.
Serve with fresh berries and/or grated chocolate. Enjoy!
